1/3 cup corn starch

1/3 cup tapioca flour

1/4 cup millet flour

4 Dry Spices (I used Stubbs BarBQ and Rub)

1 egg

1/3 cup milk

Preheat the fryer to 375 degrees and bake at 250 degrees.

Eat white flour, cornflour, tapioca flour, millet flour and spices in a plastic container with a lid. Stir to mix well.

Put the eggs and milk in a bowl and stir until everything is well mixed. Place the chicken in a bowl of flour and beat to coat. Add the remaining flour, dip in the egg mixture and return to the flour bowl to make another smoothie. Remove from the flour, remove the excess and place on a plate. Cover the rest of the chicken pieces.

First, select the largest piece of chicken. Dip the chicken in the flour again before placing it in the pan and removing the excess flour.
